One bowl chocolate cake

I made this cake to use-up some stuff laying around, without a mixer, just using a wire whisk and a bowl; it came out delicious so I figured I should share the “recipe”. I was out of vanilla, so I added cardamom powder instead, and a dollop of tahini. Hope you enjoy it if you try it.


One bowl chocolate cake

Ingredients

2 eggs

3/4 cup sugar

1 bar bitter chocolate (100g or about 3 ounces)

1 stick butter (4 ounces or 125g)

1/4 cup tahini +1Tbsp (or 4 Tbsp total)

1/2 cup flour

1/2 tsp baking soda or baking powder

3/4 tsp cardamom powder

pinch salt

 

Instructions

1. Melt chocolate with butter over low heat. While chocolate is melting, beat the eggs with the sugar in a bowl using a wire whisk and placing the bowl over the saucepan which has the chocolate. The heat from the saucepan will help the eggs get volume faster. 

2. Add tahini to the chocolate/butter mixture, and pour over the eggs, add the dry ingredients (best to mix them previously) and pour into a 9" cake pan greased with the extra tablespoon of tahini. 

3.Bake in a preheated 350F oven for about 15 minutes or until the cake puffs up and is dry alongside the edges. Bake it a few minutes longer if you like it drier or test it by tapping it in the middle. Remove, cool on a rack and serve.
