Pasta shells in pumpkin sauce

This is probably the easiest pasta to prepare and frankly one of the tastiest. Simply cook some pumpkin, mash it and combine it with the pasta. Sprinkle cheese, some toasted nuts and dinner is ready!


  • 6 oz. of shell or tube pasta 
  • 1 pound of cut-up and peeled pumpkin
  • 6 oz. of cheese (could be any melting cheese, I used feta)
  • salt, pepper, nutmeg to taste
  • 1/4 cup of toasted and chopped nuts (I used pecans)
  1. Boil the pasta till al dente and drain. In a separate pan, boil the pumpkin with one cup of water till soft. Mash and add the spices to taste. Combine with the pasta. Add the cheese and nuts. Combine. Serve.
Coffee man set up his shop on a street corner, with a few pieces of wood board and some vinyl covering; happy and relaxed, he serves fresh espresso, tea, water bottles, candy and cigarettes. 
He posted a sign by his coffee machine, a saying that goes like this:
Borrowing is forbidden
Admonishments are lifted
Wealth and good fortune are in God’s hands

    That’s it? The pasta is easy….A few ingredients and its proof that simple is best.

    This is a welcoming dish to present to the family after a long day of work and school. Pasta is a stand-by, quick meal for us, but this dish would thoroughly impress the boys (my husband and son). We could even invite company over for this one! :) Thanks for the idea Joumana.

    Never tried pumpkin & pasta as a combination but will think about it now. The color added to pasta by the pumpkin is wonderful.
