Pomegranate muhallabieh

This is an easy dessert  concocted today when I noticed the pomegranates sitting on the counter were  getting very ripe; I would recommend making it with fresh pomegranate juice, not bottled juice;  for juicing the pomegranates I  place the seeds in the food processor and run the machine for a minute; I transfer the mashed mixture onto a strainer and press on it. 

Make a muhallabieh with milk, sugar, cornstarch and rose water (or vanilla if you like); make the pomegranate cream the same way and pour a tablespoon at a time into a ramequin, switching from one to the other each time. You will get nice red and white layers, and a very pleasant tangy-creamy taste. 

INGREDIENTS:

  • Muhallabieh with milk: 2 cups of whole milk (substitute 1/2 cup of whipping cream if you like)
  • 4 tbsp of sugar
  • 4 tbsp of cornstarch
  • 1 tsp of rose water
  • Pomegranate cream: 2 cups of fresh pomegranate juice
  • 4 tbsp of sugar or more (to taste)
  • 4 tbsp of cornstarch
  • 1 tsp of rose water or rose syrup
  • 1/2 cup of pomegranate arils to garnish
METHOD:
  1. Place the milk (less 1/2 cup)  and sugar (and cream if using) in a saucepan; stir over medium heat; dissolve the cornstarch in the 1/2 cup milk remaining; as soon as the milk starts to steam, pour the cornstarch mixture and stir. When the mixture thickens, add the rose water and stir well. Set aside.
  2. Place the pomegranate juice (less 1/2 cup)  and sugar in a saucepan. Stir to dissolve the sugar and heat till steaming. Add the dissolved cornstarch and remaining juice and stir until thickened. Add the rose water and stir to combine.
  3. Pour into individual ramequins or bowls, one tablespoon at a time of each kind and garnish with pomegranate arils. Cool in the refrigerator uncovered. Serve cold.

    Oooooh, this sounds delicious (and looks beautiful too by the way). Love the contrast between the tart, fruity pomegranate and the creamy, milky layer.
