Socca

 

I am in Nice for a few days visiting my friend Anne-Marie and of course I had to have socca. Socca is this fluffy light savory thin pancake made with chickpea flour, water and olive oil and eaten as a street food in the old part of Nice or in the  harbor. 

Got you a recipe from Martine in Nice for a homemade socca. 

INGREDIENTS:

  • 250 g. of chickpea flour (1 1/2 cups)
  • 1/2 liter of water (1 pint)
  • 4 tbsp of olive oil
  • dash of salt, black pepper

METHOD:

  1. Mix the flour, water, salt, pepper  and olive oil till the batter is smooth. Set aside for about 30 minutes. 
  2. Grease a large skillet and heat for a few minutes; heat the oven till very hot; pour about 1/8 inch of batter all around the skillet and place in the oven under the broiler; bake till top is golden, breaking bubbles that form on the surface. Remove from the oven and serve very hot.

    I’ve always thought socca sounded interesting but I’ve never tried it. I am amazed that it turns out light even with no raising agent in it!

    Mmm love the socca! Had it at a Tapas restaurant in LA for the first time a few years ago. Thanks for the recipe, must get some chickpea flour.

    @Nadia: I am no expert on Niçois food, I think it is a street food, like Belgian waffles, supposed to be eaten on the go with some rosé wine or beer.

    Je connais bien Nice, j’y ai de la famille proche. La socca, c’est vraiment délicieux, à grignoter sur le Cours Saleya..Bienvenue en France alors :-)

    I have spent a lot of time in Nice, yet never realized how similar the dialect is to Italian (although I love that peppering of Spanish in it too!)

    Oh these pictures make me yearn for Nice! I can’t believe I never tried Socca when I was there. I’ll have to try this recipe. Thank you for sharing :)
