Summer is around the corner and with it all the veggies that one’s heart may desire; let’s start with the green beans, shall we? These are simply boiled or steamed a bit and dressed with a tarator sauce. This would be a great side dish for kafta kebabs or a light dinner course.
INGREDIENTS: 4 servings
- 1/2 lb green beans
- 1/2 cup tahini, 2 garlic cloves, 1/2 cup lemon juice, 1/3 cup (or more) water, salt
- chopped parsley
1. Boil or steam the beans (after washing them and sniping the ends); chop and mash the garlic in a mortar with a dash of salt and transfer the garlic paste to a bowl; pour the tahini, lemon juice and water and stir continuously until the sauce is smooth and creamy; if it is too stiff, add more water. Taste and adjust seasoning. Pour on the beans, add some parsley and serve.
Time to forage and dry zaatar for a few weeks.
