Asparagus tart

Alice (daughter, almost 18) said a while ago: ” I don’t know why you like to cook; I don’t find anything fun about cooking, so don’t expect me to cook with you or anything”.


Tonight,  she was inspired; she requested a few items, brought her laptop into the kitchen to show me the source of her inspiration: A blog with an italian name from a blogger in San Fransisco, a very well-made blog with impeccable photos and recipes, scarpettadolcetto.wordpress.com

INGREDIENTS: 6 servings

  • Puff pastry (I buy puff pastry squares from the Middle-Eastern store, pre-cut)
  • 1 bunch of asparagus
  • 1 onion
  • olive oil, as needed
  • salt, pepper
  • Shredded cheese (a mixture of Gouda, sharp cheddar and mozzarella)

METHOD:

  1. Roll puff pastry into small rectangles. With the tip of a knife, draw a fine line one inch from the border inside the pastry rectangle all around to form a margin.
  2. Bake the pastry in a 35oF oven until they are golden, about 15 minutes.
  3. In the meantime, boil salted water in a pot; drop the asparagus and blanch for 2 minutes; drain and drop in icy water.
  4. Remove the asparagus and dry in a towel; chop the onion and fry in some olive oil until the onion is soft and a bit caramelized. Divide the onion between the tarts. Place 1/4 cup of shredded cheese on each tart. Cut the asparagus to fit and place them on the cheese. Bake the tarts to melt the cheese another 5 to 10 minutes. Brush some olive oil on the asparagus and serve warm or at room temperature.

    What a great find of a recipe from a Bay Area blogger that I also like. Asparagus is my favorite vegetable but I’ve never actually made a tart with it. The simplicity of this recipe highlights the special qualities of the asparagus. I like. 🙂

    Your daughter sounds like my daughter. Asparagus are overpriced in Greece so I don’t buy them as often as I would like to. These sound delicious.

    Dear Joumana – With the kids I take heart in the fact that when they are young they take us Mum’s and all that we do for granted just like I did with mine. But once they get older, if we are lucky they will realise….This asparagus tart is lovely and notive how she cooks similar to you – pure and honest food 🙂

    I for one find that the older I am getting the more I am cooking more and more like my parents and grand parents. So I do know this, you have given and are giving your lovely daughter such a good foundation that eventually she will blossom.

    After all the fruit usually doesn’t fall far from the tree! 🙂 Why do you think I am blogging? In a hope that it will eventually it will serve a link for my boys to their food, history, culture and family stories…one can always hope 🙂

    Bonsoir Joumana, je continu à me battre contre des moulins à vents ni overblog, ni google ne peuvent ( ou ne veulent ) pas m’aider.
