Croque-sardines

If you have  a  can of sardines staring at you and no inspiration, make  a croque-sardines!


Inspired by the ubiquitous croque-monsieur,  except my croque-sardines has Middle-Eastern flavor.

Get some  rustic bread, slather a slice with muhammara, layer a few sardines; in the meantime, broil another slice with goat cheese.

INGREDIENTS: 2 sandwiches

  • 1 can of sardines (I used Morrocan sardines in olive oil)
  • 6 ounces of goat cheese
  • 1 small egg white (optional)
  • 1 clove of garlic mashed in a mortar with a dash of salt
  • 1 cup of muhammara
  • A handful of arugula or any other greens

METHOD:

  1. Mix the goat cheese with a mashed clove of garlic and the egg white (optional). Spread on a slice of bread and toast in the oven for 4 minutes until the goat cheese is set and warm.
  2. In the meantime, slather some muhammara on the other slice, place the drained and wiped sardines on top and a few leaves of arugula. Top with the other slice and serve.

    I love canned sardines (fresh ones too). Just yesterday I bought a huge selection of canned sardines from all over at this market nearby. I got sardines from Morocco, Portugal, Spain, countries in the Adriatic sea, Scandinavia and from here Monterrey Bay. They have their own terroir or shall I say (oceonoir) depending on where the fish was caught. I still go for basic whole sardines packed in olive oil. Sardines have lots of good for you healthy omega fats.

    This sandwich looks divine. I never mixed sardine and cheese silly me….
    A glass of Roussanne would do too 🙂

    A Middle-Eastern croque-monsieur sounds delicious! The sardines and muhammara make a great filling, and the broiled goat cheese top looks fantastic. Looks better than the original!

    PS on another subject, I have never tried REAL pine nuts from Lebanon or pignolis fresh picked from Italy. What a treat…..I am stuck w/ the bagged stuff from China.
