Poached egg in roll

February 10, 2011  •  Category:

Now that the good doctor has confirmed that eggs are OK to eat, I am trying to eat more of them; I am not big on eggs, however I love them poached; I discovered a real easy way to poach them in the microwave: place a bit of water in a small 3 ounce cup, break the egg on the water and microwave for 25 seconds. That’s it, your egg is poached.

First, I took out a bunch of bread crumbs (to eat later) and filled the cavities with foul on one side (use any bean mixture you like) and some shredded cheese and a bit of cream under the egg, that I broiled to melt the cheese for a minute.

How about it for an easy and hearty breakfast or lunch?

This recipe is perfect for a Sunday brunch, it is easy to make and will please everyone sitting at the table. I always buy free- range organic chicken and omega 3 eggs. My grandmother had her own farm where she raised her own chickens, these chickens were allowed to run around and eat their natural diet (which meant pecking at worms and insects and incorporating all those good omega-3s into their system) Because they got to exercise they weren’t as fat, and their quality of lives were better than than the ones that are confined to tiny dark cubicles in close quarters for all their natural life. It is easier to make peace with eating animals who had healthy, happy lives and quick and painless death.

That is completely genius. I adore eggs, most esp poached ones. I have trouble finding a hardy roll that will support the raw egg, though.

I love eggs and even though I don’t trust doctors because they have the tendency to change every now and then i think one egg per week wouldn’t make any harm to anybody. Great way of cooking them, very easy.

I absolutely adore poached eggs and the yolk spilled all over that crusty bread sounds divine!

What a GREAT idea and THANKS for teaching me how to do eggs in the microwave Joumana. I am still recovering from my first microwave experience with eggs 2 decades ago where I ‘boiled’ them in the microwave only to have them burst…lol…..
