In this image, the ma’amoul are shaped into balls, cored with the finger and stuffed with one teaspoon of date paste. You can refer to the youtube video on ma’amoul in the Taste of Beirut channel to view the technique.

    Joumana, this is just as challenging as my favourite supermarket changing the way the products are organized. I hope it ends up with all my previously saved links still working. Besides that I appreciate the new look.:-)

    I love your book and am happy to find most of my favourites in it.

    Today I went to my Lebanese grocer and he had some leaves he called molokhia – at least this is how he pronounced it and how I found it on the internet. He is not speaking the language very well and definitely not the one who prepares the meals at home. He mumbled something about typical Lebanese or Jordanese, has to come with meat and rice.

    Would you take up the challenge and post a Lebanese recipe with Molokhia.I would be happy to learn about it.

      @Gabi: I have posted several recipes on the blog for molokhia, the first one is a Coptic version and is real easy. In my opinion, the easiest way to get started using it is to buy it already chopped and frozen in middle-eastern stores. Boil a chicken and use the broth to cook the molokhia in. Add some flavoring, in the Coptic version, a tablespoon of garlic paste is fried in olive oil. don’t boil it or it will get slimy. Add some fresh lemon juice or a bit of vinegar and chopped onion and you are set! (I also included the Lebanese version in the cookbook)
