Shanklish salad

Shanklish is a wonderful cheese, very popular in Lebanon where it is incorporated into a salad, similar to the now famous Greek salad in the North America. I even read somewhere that it was invented by Kurdish nomadic tribes in the region. It is available in the US in all Middle Eastern stores and usually comes in two types: plain or hot (spicy).

I even tried making it once and although not hard, it was rather messy. If you decide to make it, I’d recommend picking a hot day or at least having a special place earmarked for it, like a basement.

INGREDIENTS:

1 head of lettuce, washed, dried, and cut into bits

1 ball of shanklish, cut into small dice

2 large tomatoes, diced

1 cup green onions (I used the leeks from the soup), sliced thin

Dressing: A drizzle of olive oil and lemon juice with a touch of salt (the cheese is already rather salty)

1. Mix gently to combine. Serve with pita bread on the side.

    Ah, les recettes estivales reviennent en force sur els blogs et cela fait plaisir … ça me faire touours envie, d’essayer de faire des fromages. Le résultat n’est pas toujours à la hauteur de mes attentes mais c’est sympa quand même !

    @Helène (Cannes); oui, mais si tu n’as pas envie de mettre la cuisine sens dessus dessous, tu peux en acheter ou prendre un chèvre a la place! mais le shanklish est épicé et salé, ce qui le rend irrésistible pour mon palais 🙂

    @Oui, Chef: well the feta would be fine. The shanklish is more on the dry side, I guess if you can find a Mexican queso, it would be the closest in texture and add some chili powder to it, then it would be as close as the real thing as possible.
