Biscuit au chocolat

This is called Biscuit au Chocolat in Lebanon, and is offered in coffee shops or cafés or in the home, to go with coffee or tea. It is easy to make, is a no-bake dessert, and keeps in the fridge. What is neat about it is that it is versatile, and one can add many different ingredients like various nuts, or dried fruits or types of chocolate, or even different cookies.

Ingredients

3 Lindt extra-bittersweet bars 3.5oz each or 100g (300g)
1 cup whipping cream
1/4 cup dulce de leche or honey or molasses
1 tsp Mexican vanilla or any other flavoring
3 cups broken animal cookies or Maria galletas or Lu butter cookies
3 Tbsp clarified butter, unsalted

Optional:

1 cup powdered sugar to coat the log

Instructions

  1. Heat the whipping cream till scalding; when you see the steam rising, and tiny bubbles showing up around the pan, then the cream is ready to be mixed with the chocolate.
  2. Turn off the heat and add the bits of chocolate. Allow the chocolate to melt, stirring a bit gently from time to time, until the mixture is creamy and smooth. Add the vanilla, Dulce de Leche, and butter. Stir gently to get it creamy and smooth again.
  3. Add the broken cookies to the mixture. mix gently with the chocolate mixture. Transfer the chocolate salami onto a long piece of foil or parchment paper and shape it into a log. Wrap it up and place it in the fridge to cool for a couple of hours or longer. The log will be easier to shape once it cools.
  4. Take it out of the fridge and shape it into a smooth log by thinning it and rolling it back and forth. Coat it with roasted chopped nuts OR powdered sugar, OR coat it with another layer of melted chocolate (use 70% bittersweet or milk chocolate).

Recipe Notes

This recipe is very versatile and ingredients can be substituted. For instance, the dulce de leche can be replaced by honey or carob or date molasses. The cookies can be switched to other types of cookies. Nuts can be added as well, like roasted peanuts or pistachios or pecans or walnuts.

For a fun look, coat the log once cool and well-shaped with powdered sugar, and weave kitchen thread on it to make it look like a salami. This is like the Italian chocolate log version.
