    I love how healthy, beautiful, and delicious this recipe is! I don’t usually keep eggplant in the house (since my hubby doesn’t like it), but I’ll have to pick some up and make this just for me! 🙂

    This is so yummy, Joumana. I usually prepare vegeterian Fatteh with chickpeas. i have never tried it with eggplant but I will definitely do so soon!! I add a tablespoon of tahine like they do in Tartous for an extra oomph to the garlicky yoghurt.

    Creative and pretty twist on one of my favorite dishes. Nice work, Joumana! By the way, have you seen “You Don’t Mess with the Zohan”? I ask, because in one of the scenes of the movie, the Zohan’s enemy is nicknamed “Fattoush.” LOL!

    Sahtein… wala you remind me of this its been a long time since I madeit.
    Your version is easier and simpler than mine, I do a tomato sauce with pomegranate juice, and also i add cubed meat fried and then cooked in the sauce… and decorate the top withground beef and pinenuts… It takes lots of time to prepare, take awesome though…I like this quick version… still have the basic flavours.

    Jourmana, great usage of the pita bread, after seeing this recipe, I’ll go get a bag of pita bread just to make fatteh, love the idea of the crunchiness in between layers of yogurt 🙂 Nice pictures as well!

    Another winner, this looks so refreshing for a nicy sunny day. I think I would grill the eggplants, everytime I fry eggplants I end up using too much oil, and they come out too soggy.
