Asparagus with yogurt sauce and pistachios

The weather these days in Dallas is as close to perfect as can be; everybody is outside, at the park, at the lake, people are barbecuing and the smell of meat is wafting through the air.

I just feel lazy; when it is so beautiful outside, all one wants to do is enjoy the fresh air, go for a walk, relax; which is what we did. I brought the asparagus, my friend made a nice salad and it was great!

INGREDIENTS:

  • 1 bunch of asparagus
  • To make dressing: 1 cup of lowfat yogurt
  • 2 cloves of garlic, mashed
  • 2 Tablespoons of olive oil
  • 1 teaspoon of turmeric
  • 2 tablespoons of chopped pistachios
  • salt, pepper to taste

METHOD:

  1. Slice off the tough ends of the asparagus.
  2. Boil in salted  water or steam. Drop in a bowl of icy water to stop the cooking.
  3. Drain, set on a plate. Make the dressing by mixing all the ingredients.
  4. Serve at room temperature.

    This is a lovely way to serve asparagus. The contrasting shades of green from the asparagus, the pistachios, and the turmeric yogurt sauce are so pretty!

    This asparagus dish looks Fantastic! You just have no idea how much I love asparagus, esp. the green one, sadly, there is still no sight of the green one here in Germany… I guess I will have to wait for another couple of months to have them.

    This is right up my ally, look at this gorgeous luxurious green forest color asparagus.It is goodness and lightness, looks so clean just like it was picked from the garden, it is low in calories, and keeps hunger pangs at bay, also acts on water retention and bloating.
    This dish is nutritional powerhouse, packed with vitamin K, E, D and turmeric has a lot of antioxidant. Thank you for this very uplifting recipe Joumana, I rate it as 5 stars for sure.

    Even though asparagus are in season now, I haven’t bought my first ones yet. I love how simple and delicious your recipe sounds and I enjoy yoghurt in anything.

    It is nice to read about one more person fascinated about his/her culinary roots. One should remember and cultivate good traditions. That is why I am a bit worried about the only son of my uncle, my cousin (my father’s brother) who lives in Canada and his parents decided not to teach him traditions of their homeland….
    It is great to be in a middle of the asparagus season….pity that it does not last here forever…

    Simple and delicious is best! I like the use of turmeric. I was going to pick up some asparagus this past weekend, but the stems were to thick and woody that I put them back.

    I live around the suburbs of Dallas :-D Yes the weather cannot get prettier than this.. a sweet prelude to the summer.

    I would have never thought of combining pistachios and asparagus! It sounds scrumptious. Simple and a very flavorful recipe.

    This looks like a delicious and new way to prepare asparagus. All the ingredients sound like they would be delicious together especially the yogurt and pistachio combo.

    How could this not be delicious? Have you tried grilled Jamon Serano with asparagus? I have had Prosciutto with asparagus many times, cold… but the hot Serano with the asparagus was deadly!

    I love this! It really is the perfect picnic food. I’m looking forward to being lazy on beach on the weekends — spring is definitely here and summer is on the way! This is the best way to enjoy asparagus- fresh, simple, and with pistachios! That, I must try.

    I love how you used yogurt to keep this nice and light. I see a lot of recipes for asparagus with aiolis that I just have to turn down. I think this dressing would be great on a lot of things!
