Cream of carrot and sweet potato soup

Four ingredients: Carrots, sweet potatoes, onions and cumin. A cube of Maggi bouillon or  some  chicken stock, a ladle of cream and you’ve  got yourself a creamy bowl of soup you will inhale.

INGREDIENTS:

  • 1 pound of yellow onions
  • 1 pound of carrots
  • 1/2 pound of sweet potatoes
  • 1/2 cup of whipping cream
  • 1 cube of chicken stock or 1 quart of the real thing
  • 1 tbsp of ground cumin (or more, to taste)
  • salt, to taste
METHOD:
  1. Chop the onions, peel the carrots and chop and peel the sweet potatoes and chop; heat a few tablespoons of olive oil or butter and fry the onions till golden; add the carrots and sweet potatoes and fry as well for a few minutes; add the cumin and fry a few seconds longer. 
  2. Pour on the veggies all of 6 cups of water or chicken stock; add a bouillon cube if adding water. Bring to a simmer and let it cook for 30 minutes or so. Using an immersion blender, puree the mixture, add the cream, simmer a few minutes longer, taste to season and serve warm.

    I agree with Rosa. The combination of ingredients in this soup is “marvelous”. I wonder how it would taste with a dollop of Mascarpone added as well. You never ever disappoint with your recipes and photos. Always a pleasure to visit and, oh, I’m so making this soup!

    One of my favorites – I actually find that often the cream isn’t even necessary, as the combination of vegetables creates a richness all its own.

    Joumana, this looks so creamy and delicious. I love your addition of cumin! I’ve made carrot potato soup before, but never with sweet potato. I will have to try that soon. :-)

    This is similar to my pumpkin soup recipe but I love the addition of carrots. I must try that next time. This is simple, warming, delicious winter comfort eating at its best!

    Joumana, I love that a soup so simple to make could have such depth of flavor. I’ve tried this also using a roasted apple and pumpkin wedge, delicious!

    That looks really warming and comforting – perfect for the weather we have here at the moment. A shame we can’t get sweet potatoes here! May have to substitute them for squash.
