Veggie fritters

Another creation from darling Eva; she took some cabbage, carrots, potato and zucchini and made these delicious fritters. She served them as a side dish  but they could just as easily constitute your lunch with a salad and some olives.

INGREDIENTS:

  • 1 Large potato
  • 1 chunk of green cabbage
  • 2 Large carrots
  • 2 Large zucchinis
  • 1 onion
  • 1 clove of garlic
  • 1 bouillon cube diluted in a bit of water
  • olive oil as needed
  • 4 Large eggs
  • pepper, as needed
  • flour (2 or 3 Tablespoons)

METHOD:

  1. Heat a bit of oil and fry the onion (this is optional). Grate all the vegetables fine. Place in a bowl.
  2. Add the eggs, bouillon cube diluted in a tiny bit of water, pepper, flour and onion.
  3. Heat some olive oil and fry a large spoonful of this mixture on both sides. Dry on paper towels and serve hot or at room temperature.

    I have only made fritters with zucchini . I can imagine how tasty these would be with the cabbage, carrots and potato mixed with zucchini also. You are enjoying wonderful food during your visit!

    This is great! I have all the ingredients, and I have been wanting to make fritters! Lately I’ve seen so many on several blogs. Theses look perfect for us. (not that the others I’ve seen aren’t good) I like that she added potatoes with the other veggies!

    I love the mixed vegetables in these, both for color and flavor. I would serve with a yogurt sauce — what do you serve them with?

    Yum Joumana, I always love fritters of any kind. And vegetable fritters with zuccini sound especially wonderful. I’ll hop over to Eva’s and see the recipe there too.

    I like fritters (roesti), but avoid them because they are fried (o.k. they are called fritters from some reason:)). Anyway…they look gorgeous!

    Love vegetable fritters but would have never thought of adding the cabbage and the bouillon cube.

    There are so many variation that you can do to this recipe, changing the veggies.This is one of our family staple recipe but it’s with zucchini or parsley and herb ,we add a dollop of yogurt with garlic on the side, and it is just wonderful and addictive, crispy around the edges and moist in the center. Eva’s recipe has beautiful array of vegetables, and colors.The flavor and texture is a wonderful change for me, I am going to experiment it with cabbage and potatoes next. Thank you Joumana.

    When my mom’s garden starts overflowing with fresh produce veggie fritters become a staple in her house and in my house (she sends me home with veggies every time I visit her!). These are absolutely beautiful!

    Joumana…tis is one quick evening snack at my place most of te time. I usually make variations in de veges to make it different everytime….

    These look simply irresistible! We normally add in bean sprouts & chopped chili. I love having these with some chili sauce. Hope you’re having a great weekend, dear.

    Dear Joumana – Just the colors in the fritters makes me drool. Every family must makes these monthly with all the left over 1/2 eaten veggies in the fridge, non? :)

    Its amazing how perfectly fried these fritters are. A must have this summer :)
